Kinako flavored Viennese sable cookies.

"Kinako" is soybean flour commonly used in Japanese desserts.

Its flavor is often compared to that of peanut butter,

but I find that kinako has a softer, more delicate taste.

I've added a hint of cinnamon to give these delicate cookies a refreshing, lingering finish.
